Patio Romano restaurant in Córdoba

«Córdoba. Away and alone. Pitch-black pony, risen moon and a sack of olives at my saddle. Though I know the roads I travel, I shall never get to Córdoba.

Through the meadow, through the wind, pitch-black pony, crimson moon. I am in the sights of Doom that watches from the towers of Córdoba.

Oh, the road lies long before me! Oh, for my courageous pony! Oh, for Doom out waiting for me long before I get to Córdoba.

Córdoba. Away and alone.»

Federico García Lorca

The heart

Feelings are the reflection of the heart, and its art is the reflection of Cordoba. For this reason, the narrow streets of the Jewish Quarter constitute a perpetual fantasy dream for creation. The mixture of civilizations fills the air of ancestral magic, which gives rise to restlessness and strong emotions. That is why its inhabitants look at the world through the contemplative soul of their poets and perceive with passion everything that surrounds them. The harmony with which the painter Julio Romero approached a canvas is the very same one with which a flamenco dancer draws with their feet on the floor. The reverence with which a luthier caresses the body of a guitar is the very same gentleness with which our team handles the food, so as to offer the customer the very best of our cuisine.

Poetry is the feeling which overflows from the heart and pours out through your hand. (Carmen Conde)

Ingenuity

Reinvention and tradition are at the heart of our kitchen. Starting from the fundamental principles of our most traditional dishes, it brings us incredible joy and excitement to find new challenges and ways of serving them. To create one needs boldness, ingenuity and acuity. These are the basics in our cuisine and the sum total of these creations is the composition of our menu which is based mainly on Cordovan and Andalusian gastronomy. We opt for the new restaurant industry, technology and new techniques which focus on flexibility and constant search for the perfect balance between happiness and quality of life. To eat well but to cook with ingenuity is one of our core concepts.

It is not enough to have a good mind; the main thing is to apply it well. (René Descartes)

Essence

Be it the aroma of orange blossom in spring, the extra-virgin olive oil from Subbetica, or even the meets and charcuterie from Valle de Los Pedroches, the Montilla-Moriles wines, the oranges from Palma del Rio… Be it the serenity of the Guadalquivir traversing an enormous valley or all the exuberance of our mountains and its hidden world… Or be it the entire splendor of contrasts of a province whose nature always prevails, even takes hold of our senses and surrounds our soul.

What is the essence of Cordoba? Where is the southern spirit? We ask ourselves while we wander through the streets of the Jewish Quarter, captivated by the charm of its streets, exploring its patios infused with the scent of geraniums. We will never find out. It is hidden among the joy of its people and is the essence of its cuisine.

The aim of art is to represent not the outward appearance of things, but their inward significance. (Aristotle)
